Spring Carolina bluefish recipes

Fishing for bluefish is just beginning off of our local Carolina coast. Pier fishermen are reporting their first nice-sized bluefish taken with plugs while surf fishermen are catching some off of fresh cut bait. Bluefish are also off the beaches feeding out over ocean structures.

Bluefish have a poor reputation among some southerners as table fare because folks try to fry them up in oil. That is fine for very small blues but big ones need to be broiled, baked or grilled. Cooked properly, they are a very good tasting fish with a nice distinctive flavor.
